2018 Cabernet Sauvignon

This West Bank Cabernet Sauvignon was dried appassimento style for 6 weeks before natural yeast was used to ferment the grapes through Carbonic Fermentation. It was then aged in oak for 30 months with an additional 12 months in bottle.
